Mother's Day 2015

Mother's Day was absolutely amazing this year!  My week started with Bo sending me a beautiful bouquet of roses & sending me for a pedicure on Saturday morning.  On Mother's Day, the girls woke up bright & early, climbed into bed with Bo & me, then served me breakfast in bed. :-)  I got coffee & chocolate covered strawberries...making sure to have enough for everyone, of course! :-)

Izzy & Maggie made me the sweetest cards at school with handprints & thumbprints.  Maggie even wrote her entire card all by herself!  Izzy's was a "fill in the blank" type of card about "My Mom is Special because..."  She seems to think I'm smart because I can add very big numbers together. (It's a proud moment when you have successfully fooled your child into thinking you can do math! ...or maybe it's because it's still 2nd grade math!  Either way, she'll probably only want 1 more year of math help from me....then dad's on duty!)

Later that morning, Bo (a.k.a. Sexy Chef) & his sous chef made me delicious Quiche cups for breakfast.  Eggs, bacon, spinach, mushrooms & cheese...YUM!

After we filled our bellies, we changed into painting clothes & headed outside.  We watered our thirsty plants & was surprised by our first little cucumber!  This is the first thing I've ever grown! (& yes, I am taking partial credit for this b/c I did actually help in this process! :-) )  After that, we spent the rest of the day painting our new chicken coop.  I'll just post 1 quick pic for now & will post the entire process in another post dedicated to the chicken coop as a whole!

I am so blessed to call this crew mine!  I always knew that no matter what else I became in my life, I knew I wanted to be a mom.  I have been a mom for 17 years & I couldn't be happier!
Thank you girls for loving me & letting me be yours!

Breakfast Quiche Cups

8 eggs
1/2 bag fresh spinach
1 package of mushrooms; sliced & chopped
1/2 package bacon; cooked & crumbled
1/2 small onion; chopped
1 C. shredded cheese
salt/pepper to taste
cooking spray

Preheat oven to 350F.
In a large saute pan, cook fresh spinach until wilted.
Remove spinach from pan & squeeze out all liquid; set aside.
In same saute pan, cook bacon until crispy.  Remove from pan to drain on paper towels.
Cook chopped onion & mushrooms in a little reserved bacon grease.
Whisk eggs in a bowl with salt & pepper.
Add chopped bacon, onion, spinach, sliced mushrooms & cheese into egg mixture.
Scoop egg mixture into greased muffin tray.
Bake for 15-20 minutes.
